Burrito Jar

Ingredients:

  • 1c salsa
  • 1 can black beans (drained and rinsed)
  • 1c shredded cheddar cheese
  • 1/2c greek yogurt

Instructions:

  • Divide evenly among 4 1/2pint canning jars in this order:
    • 1/4c salsa
    • 1/4c black beans
    • 1/4c cheese
    • 2tbs greek yogurt
  • Eat directly from the jar!

***This recipe makes 4 servings.

These are perfect for a quick grab ‘n go type meal or snack. I tend to crave Mexican food about 7 out of 7 days a week (haha) So, this is a perfect way for me to get that Mexican food fix without it being unhealthy and it also keeps my portion size in check!

Did you notice the greek yogurt? Did you know you can substitute greek yogurt in just about every recipe instead of using sour cream? It is packed with protein!
