Cinnamon Brown Sugar Cheesecake Cups (Easy Layered Dessert Bar for the Kids)

Full transparency. This week has been….a week! You know, one of those that feels like a decade? We’ve all been there. Ugh. So, here we are at the end of it and I wanted to make something special for the kids. Kind of a TGIF (Thank God it’s Friday) but on a Thursday. haha

I decided something sweet would hit the spot. So I made THE EASIEST dessert ever!

So, if you’re like me and looking for a dessert that feels a little more special than your average no-bake treat—but still takes barely any effort—these cinnamon brown sugar cheesecake cups are it.

The best part? No oven, no fuss, and everything comes together in about 10–15 minutes.

This is the kind of recipe that looks impressive in little cups or jars but is secretly incredibly simple.


Ingredients (Makes 4–6 Dessert Cups)

Cinnamon Brown Sugar Crust Layer

  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 to 2 cups whipped topping (Cool Whip or homemade)

Optional Toppings

  • Caramel or chocolate ice cream topping (or both-who’s judging right?)
  • Strawberries or berries
  • Crushed cookies
  • Cinnamon sugar sprinkle

Instructions

1. Make the cinnamon brown sugar crust

In a small bowl, mix together graham cracker crumbs, melted butter, brown sugar, cinnamon, and a pinch of salt until the texture resembles damp sand.

Spoon a layer into the bottom of 4–6 small cups or jars. Gently press it down so it forms a firm base.


2. Make the cheesecake filling

In a medium bowl, beat the cream cheese until smooth and fluffy.

Add powdered sugar and vanilla extract, mixing until fully combined and creamy.

Gently fold in the whipped topping until the mixture is light, smooth, and airy.


3. Build the layers

Spoon the cheesecake filling over the crust layer in each cup making the second layer.


4. Add toppings and chill

This is where the kids can really have fun! You can make this into more of a dessert-bar feel by having them choose and assemble their next layer of toppings. Get creative! I suggest something like this:

  • Crust
  • Cheesecake filling
  • Toppings (ideas listed above)

Chill for 30–60 minutes if you want a firmer, more set texture—or serve right away for a softer, mousse-like dessert.


What Makes This Recipe Different

Most no-bake cheesecake cups use a plain graham cracker base. This version adds a cinnamon brown sugar crust layer, which gives it a warm, bakery-style flavor that feels closer to a dessert bar than a simple cup.
