Tex Mex Chicken Casserole

(makes 4 freezer meals)


  • 4 chicken breasts, cooked and shredded
  • 8 cups of cooked rice
  • 2 cans of Rotel tomatoes
  • 2 packs of taco seasoning
  • 2 cans of whole kernel corn, drained
  • 2 cans of black beans (undrained)
  • 1 small can of black olives, drained
  • 6 cups of cheddar cheese, grated


  • Mix together all of the ingredients in a bowl, except the cheese.
  • Divide out into four pans
  • top each with the cheddar
  • bake at 350 until thoroughly heated and cheese is melted

serve with sour cream (greek yogurt for a healthier option) and salsa on top and tortilla chips on the side
